Light Breakfast/Luncheon Buffets
A station or stationary display allows your guests to enjoy morning, afternoon or evening events and not be rushed or annoyed by a buffet time schedule or the constant interruption of passed Hors d’ Oeuvres.

Stationary Crudite, Olive, Cheese and Fruit Display
An Impressive arraignment of imported and domestic cheeses, dried sausages and salamis, fresh fruit, vegetable crudités with assorted dips, crackers, plum tomato crostini, and imported olives. Accenting this table will be a fern/fica plant, a fresh floral landscape, and votive candles. Draped with white linen, this 60” table will be ready for your guests to enjoy as soon as they arrive.
Stationary Mediterranean Display
An Impressive arraignment of imported and domestic cheeses, dried sausages and salamis, fresh fruit, vegetable crudités with assorted dips, crackers, plum tomato crostini, imported olives, stuffed grape leaves, market made hummus with pita, frittata, breaded eggplant salad, artichokes, and herbed feta. Accenting this table will be a fern/fica plant, a fresh floral landscape, and votive candles. Draped with white linen, this 60” table will be ready for your guests to enjoy as soon as they arrive.
Deluxe Raw Bar
Everyone has a raw bar set-up, but this is the BEST!! Presented with floral accents and a linen draped table with crushed ice, platters, and baskets, this “Seafood Bar” can certainly stand alone or be combine with other stations. Selections may include: Caesar Salad with Market Made Croutons, Deluxe Italian Antipasto Platter, Imported and Domestic Cheese Platter with Crackers, Rhode Island Style Snail Salad, Wakami Seaweed Salad with Grilled Calamari, Poached Salmon Side with Traditional Accompaniments, Fresh Shucked Oysters and Littlenecks, Stone Crab Claws, Extra Large Shrimp Cocktail, all served with your choice of 5 hot sauces, lemon, and traditional cocktail sauce.
Omelet Station
A great addition to any breakfast or brunch!! Custom made omelets are prepared from a selection of the finest ingredients by our expert omelet chefs. Presented with crisp white linen, seasonal accents, and a fresh floral and plant landscape.
Nacho Station
This stationary display will be presented on a linen draped table with themed accents, votive candles, seasonal greens and flowers. Elements incorporated into the table include: Guacamole, Sour Cream, Sliced Olives, Salsa, Diced Red Onion, Sliced Jalapeño, Jack Cheese, and Tri Colored Tortilla Chips.
Mexican Station
This Mexican buffet will surely be the hit of the evening. Your guests will have the opportunity to custom craft a number of Mexican specialties. From Fajitas to Taco to Burritos to Nachos, they’ll be hard pressed to try to find something they don’t like!! Displayed on a linen draped table with South-of-the-Border accents including fresh flowers and ferns. Selections include: Seasoned Taco Meat, Chicken Fajita, Spanish Rice and Beans, Taco Shells, Tri-Colored Tortilla Chips, Soft Corn Tortillas, Guacamole, Sour Cream, Salsa, Sliced Black Olives and Jalapeño Peppers, Shredded Lettuce, Diced Red Onion, Diced Fresh Tomato, and Shredded Jack Cheese.
Antipasto Table
A delicious array of Italian specialties selected from our Tavola alla Toscana menu artfully arranged in varying heights with a dramatic fern/face plant centerpiece. Accented with votive candles, fresh flowers, and seasonal greens. Your selections could include: Mesclune Salad, Imported Provolone and Reggiano Parmesan, Roasted Red and Yellow peppers, Fresh Tomato and Mozzarella Salad, Marinated Wood Grilled Vegetables, Olives, Assorted Frittatas, Tortellini Pesto Salad, Italian Cold Cuts, Dried Sausages, Fresh Artisan Rolls, Dipping Oil, and Imported Balsamic Vinegar.
Sauté Station
Jumbo Gulf Shrimp, Diver Sea Scallops, Stir Fry Chicken and Beef served in four styles with jasmine rice. Oriental- Red and green diced peppers, water chestnuts, bamboo shoots, scallions with a light teriyaki sauce. Indian-Shredded carrot, diced red and green pepper, lemon grass, cilantro, scallions, in a coconut curry sauce. French-Leeks, sliced champignons, pine nuts, garlic in a classic beurre blanc sauce. Mediterranean- Fresh diced tomato, kalamata olives, sliced artichokes, olives, capers, fresh herbs, and olive oil.
Carving Table
Selections from our market’s butcher shop are expertly carved to your guests’ specifications. Accenting the white linen draped tables will be a floral landscape, votive candles, and a spray of fresh wax flowers in a glass vase. Your guests will have an opportunity to make a quick sandwich with our assorted condiments and fresh baked rolls, or choose to have a light dinner and enjoy your choice of accompanying sides. Selections may include: Roasted Filet of Beef Tenderloin, Sliced Sirloin Strip, Top Round of Roast Beef, Rubbed Spicy Pork Loin, “Pitt Style” Ham, Grilled Leg of Lamb, or Oven Roasted Breast of Turkey. Condiments may include: Gourmet BBQ Sauce, Fresh Fruit Chutney, Honey Cup, Whole Grain, or Dijon mustard, Horseradish Sauce, Herbed Mayonnaise, Horseradish Sauce, and Vidalia onion relish. Please refer to our catering menu for selecting side dishes.
Pasta Station
Perhaps the most interactive and “fun” station of the evening, your guests will have an opportunity to create there own “signature” pasta and have it expertly prepared by our encouraging and entertaining pasta chefs. This well appointed table will be draped in white linen and garnished with a fresh floral landscape, water vase centerpiece and votive candles. Your choice of 2 pastas, sundried tomatoes, capers, artichoke hearts, sliced olives, garlic, diced red onion, red and yellow roasted peppers, straw mushrooms, grated Romano cheese, fresh herbs, anchovies, “secret spice”, white wine, pesto, cream, and fresh basil Marinara. Gulf shrimp, diced ham, and grilled chicken may be added to this station.
Salad Station
The salad station will consist of a banquet table draped with white tablecloths and have a floral landscape. A chilled granite slab will be the base of a free form tossed salad. Accompanying garnishes of Grape Tomatoes, Pepperoncini, Olives, Cucumbers, Sliced onion and dressings will be served from glass bowls. A Basket of rolls and Tom’s store made croutons will allow a “salad bar” feel. Platters of Shells and Broccoli, Pasta Prima Vera, and Wood Grilled Vegetables round out this impressive display.
Soup Station
Recommended for only the cool months of the year. Our “Soup Nazi’s” will expertly prepare bowls of steaming hot soup to your recommendations. Similar to a pasta station, but more seasonal. Your list of ingredients include: fresh mushrooms, scallions, a miripoix of roasted vegetables, sautéed escarole, red and white kidney beans, diced potatoes, soy sauce, shredded carrot, onion and garlic. Meats include julienne of pork loin, diced breast of chicken, sliced ham, and shredded short ribs of beef. Your guests will choose from one of the following “stocks” Chicken, Beef, Vegetable, Tomato, and Cream.
Brushetta Station
Also similar to the pasta station concept, this interactive station allows your guests to create their own Tuscan style brushetta. Thick grilled slices of Italian bread are topped with a wonderfully sautéed mixture chosen by your guests. Selections include: Sautéed escarole, sun dried tomatoes, ripe olives, scallions, mushrooms, white beans, diced ham, plum tomatoes, red and yellow roasted peppers, garlic, fresh grated parmesan cheese, extra virgin olive oil, and diced red onion,
Grilled Pizza Station
Have your guests make their own grilled pizza or our pizza chef can come up with some great combinations!! Ingredients may include: Smoked salmon, buffalo chicken, bacon, grilled vegetables, eggplant, pepperoni, and other delights. Sauces may include: Traditional tomato sauce, spicy peanut sauce, ranch sauce, olive oil, and fresh chopped tomato. Cheeses may include: Shredded mozzarella, havarti with dill, shredded cheddar, crumbled blue and feta cheeses.
Summer Grilling Station
Tossed Caesar Salad, Sundried Tomato Pasta Salad, Dill and Chive Potato Salad, Grilled Vegetable Salad or any of our salad from our market will be displayed on platters and bowls with a fresh floral landscape with seasonal accents. Selections from the gill may include: Boar’s Head Bacon Burgers, Saugy Frankfurters, Carved Flat Iron Steaks, Steak House Style Sirloin, Marinated Gulf Shrimp, Jumbo Sea Scallops, Ranch Style Boneless Chicken Thighs, Sundried Tomato or Tuscan Style Chicken Breast, Cajun Rubbed Salmon Fillet, or Tom’s Famous Italian Sausage. Served with baskets of assorted rolls and condiments.
Quesadilla Station
Floured tortillas are prepared “tableside” by our staff. Although your guests do not have a choice of fillings, you can select a myriad of combinations to be served. The quesadillas are made and sliced into triangles on a wood cutting board, offering your guests both the theater of a station and the convenience of a stationary display. In addition to the standard fillings of cheese, grilled vegetables, and grilled chicken, requests for unusual combinations include: Shredded duck, goat cheese and cranberry jam; proscuitto, provolone, and fig compote; refried beans, pulled pork, jack cheese and spicy salsa; rosemary ham, brie cheese and roasted peppers; curried lamb, apple chutney and aged cheddar,
Children’s Station
Just what the kids want!! Mini meatballs with grated cheese, mozzarella sticks, chicken fingers with dipping sauce, french fries, hot dogs with all the fixings, and pizza strips. Draped with white linen and accented with flowers, ribbons, and balloons, this is a table the kids will love and the adults will try to enjoy!!
Charcuterie Station
Various pate’s and terrines are displayed on large wood boards for your guests to enjoy with crackers and fresh sliced French bread. Accompanying this display would be baked brie, imported and domestic cheeses, and dried sausages and salamis. Throughout the table will be platters, bowls, and ramekins of mustards, olives, French cornichons, capers, plum tomato crostini, and other traditional garnishes. A great addition to this station would be Apple Cider Poached Salmon with Remoulade sauce. Presented at varying heights with seasonal accents, votive candles, and a fresh floral landscape.
Seafood Station
“Delicacies of the Deep” is the only way to describe this superb station!! Your selections could include: Stuffed Rock Lobster Tails with Drawn Butter, Balsamic Glazed or Florentine Stuffed Salmon Fillet, Oysters Rockefeller, Scallops Casino, or Fillet of Sole Francaise with Newberg Sauce will certainly be the talk of the evening!! Your table will be accented with themed pieces, a fresh floral landscape, votive candles and a spray of fresh flowers. Jasmine rice with confetti vegetables will accompany the exquisite buffet.
Appetizer Station
This “Grazing” station will consist of a linen draped table, fresh floral accents, and votive candles. Incorporated on the table will be themes associated with the appetizers (Mexican, Asian, Italian, etc.) Choose from over 100 items from our hot and cold hors d’ oeuvres and Tavola alla Toscana menus.
Bagels, Lox, and Fresh Seasonal Fruit Station
Perfect for a Sunday brunch!! Truly a work of art. This station will have as a focal point an elevated chilled granite slab as the serving point for the smoked salmon. Assorted Bagels, Plain and Chive Cream Cheese, Traditional Garnishes, Sliced and Whole Fresh Fruit, and Seasonal Berries round out this artistic display.
Cocktail Carving Station
Presented on a linen draped table with fresh floral and plant accents. Expertly carved Top Round of Beef and Roasted Breast of Turkey will be sliced to your guests’ specifications and served with soft rolls, assorted condiments, and a fresh tossed Caesar salad with market made croutons.
Guacamole Station
Imagine having guacamole prepared to order!! Our guacamole chef will combine your favorite ingredients to make a truly custom experience. Fresh avocado, Pico d’ gallo, onions, chilies, tomatillos, fresh lime juice, sour cream, assorted hot sauce, and onions are prepared station-side according to your guests specifications. Served with salsa, sour cream, tri-colored tortilla chips, and jack cheese. Accented with a South-of-the-Border theme
Chinese Dumpling Station
Dim-sum at its best!! Pork and cabbage and vegetarian Potstickers will be wok-fried in front of your guests and served with sweet chili glaze and pan-Asian jus. Oriental accents will make you think you’ve stepped into an Iron Chef kitchen!!
Sundae Station
Your sundae station will start with vanilla ice cream and include 8 toppings, 3 syrups, bananas, brownies, and a pile of whipped cream...and yes, the obligatory cherry!! Served from a white linen draped table and accented as simplistic or as dramatic as your event allows.
Gourmet Brownie, Pastry and Cookie Station
Fresh Baked Cookies, Assorted Miniature Pastry, and Gourmet Brownies are served on silver trays at varying heights and accented with a fresh floral and plant landscape.
Dessert Station
Assorted cakes, pies, and finger pastries from our bakery are presented at varying heights with crisp white linen, votives, and fresh floral accents. Your selections may include: Carrot Cake, Linzer Torte, Cheese Cake, Chocolate Mousse, Lemon Meringue, Black Forest Cake, Triple Chocolate Cake, Apple, Pumpkin, and Custard Pies.
